Cherry Strawberry Muffins
2 cups flour
2 tablespoons baking powder
1 cup sugar
1/2 teaspoon salt
1 egg beaten
1 cup milk
1/3 cup oil or melted butter
1 cup drained and deseeded fresh, canned, or frozen cherries OR strawberries
1. Sift all of your dry ingredients into a bowl.
2. Whisk the egg in another small bowl and add milk and oil. Stir liquid ingredients into dry ones, just to blend.
The batter should look lumpy. Fold in cherries or strawberries
3. Fill well greased muffin pans two thirds full.
4. Bake at 200 degrees about 20 minutes. Serve warm.
