Tomato Okra

1/4  cup white rice 
3  teaspoons butter
1 teaspoon mashed garlic
2  stalks celery 
3  cups chopped tomatoes 
1  diced green bell pepper 
1/4  cup diced onions 
1 1/2  teaspoons salt 
2  cups sliced okra pods 
3  teaspoons chopped parsley 


1.Brown the rice to a light golden color with 2 teaspoons melted butter in a medium saucepan. Add 3 cups water. Bring to a boil.
2.Saute celery,with garlic, pepper and onion in another pan with remaining butter. Add the tomatoes with juice. Bring to a boil. Pour into rice. Add salt. Simmer covered until rice is tender. Add okra pods and simmer 15 minutes more. Serve hot, sprinkle with parsley.
