4 chicken breasts
3 garlic cloves
1/2 cup balsamic vinegar
1/4 cup soy sauce
1/2 cup orange juice
Fresh grated ginger
3 cups of mushrooms
Rub the chicken breasts with a mixture of the orange and grated ginger.
Heat the oil in frying pan and add the chicken. Remove chicken and place in a casserole dish.
Fry the mushrooms in the same pan with fresh cruched garlic and the cashew nuts.
Add balsamic vinegar slowly and organge juice and pour this over the chicken.
Cover the chicken with sliced oranges
Bake the chicken for 20-25 minutes.
