Orange and Ginger Chicken

4 chicken breasts
2 oranges
3 garlic cloves
1/2 cup balsamic vinegar
1/4 cup soy sauce
1/2 cup orange juice
Fresh grated ginger
3 cups of mushrooms
cashew nuts

Instructions:

  • Rub the chicken breasts with a mixture of the orange and grated ginger.
  • Heat the oil in frying pan and add the chicken. Remove chicken and place in a casserole dish.
  • Fry the mushrooms in the same pan with fresh cruched garlic and the cashew nuts.
  • Add balsamic vinegar slowly and organge juice and pour this over the chicken.
  • Cover the chicken with sliced oranges
  • Bake the chicken for 20-25 minutes.
