The Egyptian Falafel

 

1 cup dried fava beans

1 large onion chopped

2 cloves of garlic chopped

4 tablespoons fresh dill chopped

4 tablespoons fresh parsley chopped

4 tablespoons fresh cilantro chopped

5-6 heads green onion chopped

1 tablespoon coriander

1 tablespoon cumin

1 tablespoon black pepper

1 tablespoon salt

Oil for frying 

 

Place dried fava beans in bowl covering with water. Allow soaking overnight.

Drain fava beans.

Combine fava beans, garlic, onion, green onion, dill, cilantro, parsley, coriander, salt and black pepper in bowl and mix them.

Combine the mix ingredients in a food processor (mixture). You want the result to be thick paste.

From the mixture into small balls, about the size of a ping pong ball. Slightly flatten.

Fry in 2 inches of oil at 350ْ degree until golden brown (5-7 minutes) serve hot. Enjoy.
