250 g mixed long grain rice salt and pepper to taste 125g frozen peas 125g sweetcorn 1 red pepper,halved, seeded and diced 2 coriander Dressing 90 ml olive oil 3tbsp grape vinegar 1tsp Dijon mustard 1 garlic clov, crushed
1.Cook the rice in boiling salted water for 12- 15 mins. until just tender, adding the peas and sweetcorn for the last 3 mins. 2.Drain, rinse in boiling water and drain again. Transfer to a bowl. 3.For the dressing; mix the olive oil, vinegar, mustard and garlic, and season with salt and pepper. 4.Pour over the rice while still warm. Stri gently and leave to cool. Mix in the red pepper and coriander to the rice and serve at once.
